È una dei dolci più buoni in assoluto, orgoglio di tutte le nonne italiane: la marmellata di arance è l’ingrediente fondamentale per tantissimi dessert nostrani, ma è deliziosa da gustare anche semplicemente con pane o fette biscottate.
Buonissima ma non certo dietetica, la marmellata di arance ha una carica calorica non indifferente: ben 248 calorie ogni 100 grammi!
Ecco allora che per continuare a gustare questa deliziosa confettura dobbiamo provare la variante più leggera, ma altrettanto buona: la marmellata di arance senza zucchero.
Storia e produzione della marmellata di arance
Le storie e le leggende sulla nascita della marmellata di arance sono diverse e di differente provenienza. Pare che già gli antichi Greci avessero la consuetudine di bollire la frutta (come le mele cotogne) insieme al miele, che faceva da conservante in sostituzione dello zucchero. E anche i Romani immergevano la frutta in recipienti pieni di vino cotto o passito e miele. La conserva ottenuta permetteva di trovare una soluzione al deterioramento della frutta di stagione, ed era anche buona!
Una leggenda fa risalire la nascita della marmellata d’arance a Caterina d’Aragona e alla sua nostalgia per la terra lontana. Caterina, infatti, aveva sposato Enrico VIII di Inghilterra e lontana dalla sua terra natia, poteva assaporare il gusto di arance e degli altri agrumi attraverso la marmellata.
Ma la marmellata di arance per eccellenza è quella che si fa dalle arance siciliane : in Sicilia infatti le arance così come gli altri agrumi trovano un terreno fertile e soleggiato per crescere rigogliosi.
La marmellata di arance si prepara durante l’inverno, quando gli agrumi raggiungono la maturazione per la raccolta e poi viene conservata. Per la buona riuscita della marmellata è fondamentale l’utilizzo di arance di qualità, preferibilmente biologiche e non trattate chimicamente.
Gli Ingredienti della marmellata di arance senza zucchero
Per eseguire la ricetta della marmellata di arance sono necessari i seguenti ingredienti:
– 6 arance di Sicilia
– 2 mele
Niente zucchero quindi!
Procedimento: come preparare la marmellata di arance amara
1) Il primo passaggio dovuto è quello di sanificare barattoli e tappi: i contenitori dove verrà conservata la nostra marmellata di arance devono essere perfettamente puliti e igienizzati.
2) Pelate a vivo le arance, eliminando tutta la parte bianca.
3) Eliminate dalle mele il torsolo, ma non toccate la buccia: lasciatela lì dove è!
4) Tagliate tutta la frutta a pezzi e ponetela sul fuoco.
5) Portate a bollore e proseguite la cottura, mescolando di tanto in tanto, per almeno 40/45 minuti.
6) Usate un termometro per alimenti per misurare la temperatura: non appena la marmellata di arance raggiungerà i 108°, potrete spegnere il fuoco.
7) Riversate la marmellata calda dentro i vasetti, utilizzando un imbuto. Ripulite bene i bordi e chiudete con i tappi.
8) Capovolgete i vasetti e lasciate freddare la marmellata di arance senza zucchero.
9) Infine verificate che il sottovuoto sia avvenuto correttamente e girate i vasetti: la vostra marmellata è pronta!

Dopo aver preparato la marmellata di arance senza zucchero, è arrivato il momento di scoprire come mangiarla!
La marmellata di frutta è uno dei tasselli fondamentali per la colazione mediterranea: dalla Sicilia alla Spagna, dal Marocco al Libano: tutti amano il pane con burro e marmellata. In assenza del pane, potete utilizzare benissimo anche le fette biscottate!
Ma la marmellata è anche ingrediente d’eccellenza per i dolci e per alcuni piatti salati: le crostate di frutta sono una delizia, senza dimenticare l’accostamento tra marmellate e formaggi: un’esplosione di sapori per i nostri palati!
